About Fluffy Chocolatey French Toast
I had a bit of an obsession with French toast for a while and found myself drinking hot cocoa with it – a perfect combination. But I thought why not make chocolate french toast made with cocoa powder.
Of course a bit of a twist is always good, and I love the chocolate and orange combination so I decided that this recipe needed to include orange as well.
So, I made a pocket inside thick bread, and nestled orange marmalade and chocolate chips there. Then let the bread soak in the chocolatey egg mix and seal the pocket.
Think dark chocolate and orange marmalade melting inside the bread while the bread is cooked nicely on the stove top. It truly is a match made in heaven! Decadent? Sure. But it’s delicious.
Chocolate french toast ingredients

Bread
I use Japanese milk bread for this french toast recipe. It's the best for extra high and fluffy French toast. You can use most types of bread, but thick and soft brioche type bread or unsliced soft and airy bread is what you’re after. Cut it thick so that you can make pockets in it for the chocolate.
Cocoa powder
I love chocolate, and this double chocolatey French toast is delicious. This cocoa powdered recipe is perfect for French toast. I use Dutch-process cocoa powder, pure cocoa powder or natural process cocoa powder.
Chocolate chips
I use dark chocolate chips or bar, which work very well with orange marmalade.
Orange marmalade
I love the chocolate and orange combination, but if you have strawberry or another marmalade or jam, you can use it.
Maple syrup
Drizzle some maple syrup on top of this chocolate French toast!
How to Make Chocolate French Toast
This chocolate French toast is easy to make.
Cut the bread


First, cut the bread slice into half. Then, make a pocket on the non-crust edge of the bread. Be careful and avoid breaking the bread.
Cut off the crust, but keep them for French toast sticks or breadcrumbs (panko). Then sneak marmalade first and then chocolate chips into the pocket.
Soak the bread


I use a ziploc bag instead of a large mixing bowl.
This way is better as the bread absorbs the egg mix faster, only taking 30 minutes (rather than overnight).
It also doesn’t take up as much space in the fridge as a bowl, and you don’t have to turn over the bread in the bowl but instead just flip over the bag instead.
Remove as much of the air from the bag before sealing it.
Cook
Preheat a skillet to medium, add butter, and reduce heat. Then take out the stuffed bread slices with a flat spatula, and place onto the pan.
Don't use fingers. The bread is soft and fragile. Use a lid on the skillet. This way the bread is steamed and cooked inside. Flip the French toast after five minutes. Avoid burning the bread.
Topping
This is the fun part! You can garnish the toast with anything you like. I topped with greek yogurt. Whipped cream also works. Top up grated chocolate, and crushed nuts. Maple syrup also goes really well with this recipe. So put a healthy dollop of maple syrup if you are a fun.

Chocolate French Toast
Ingredients
- 2 bread (note 1) (thickly sliced)
- 2 tablespoons orange marmalade
- 2 tablespoons chocolate chips
Egg mix
- 2 tablespoons cocoa powder
- 3 tablespoons granulated sugar (note 2) (42g)
- ¾ cup milk (note 3) (177cc)
- 2 eggs (medium sized)
- salt (pinch)
- ½ tablespoon pure vanilla extract (optional)
Cooking
- 1 tablespoon butter (15g)
Topping
- 1 cup Greek yogurt
- 1 tablespoon grated chocolate
- 1 tablespoon maple syrup
- 1 tablespoon crushed nuts (optional)
Instructions
Preparation
- Cut bread slice into half with a knife. Make a pocket by cutting the bread slice. Avoid breaking the bread.
- Add orange marmalade first and then chocolate chips in the pocket. Place the bread in a ziploc bag. Set aside.
- Mix egg and sugar in the bowl with a whisk. Add milk, cocoa powder, salt, vanilla extract, and combine them well until the mix becomes consistent.
- Pour the mix into the ziploc bag, making sure you add the mix into the pockets and cover all of the bread slices. Remove as much air as possible before sealing the bag. Set aside in the fridge at least 30 minutes.
- Prepare greek yogurt, grated chocolate and maple syrup, as well as fruit or nuts for topping.
Cooking
- Preheat the skillet to medium heat. Place butter on it. Then turn to a low heat.
- Use a large flat spatula, and carefully transfer each bread slice on the skillet. Place the lid on and cook them for five minutes. Avoid cooking on high heat as it will burn the bread.
- Flip over the bread slices with a spatula. Cover the lid and keep cooking for five minutes.
- Place French toast on a plate once cooked. Top off with greek yogurt and grated chocolate. If you like maple syrup, drizzle plenty on top, and sprinkle crushed nuts. Add your favourite fruits. That's it! Serve immediately. Enjoy!
Recipe Notes:
- Using shokupan or milk bread is the best for this recipe. It's soft and silky smooth Japanese bread. The white bread is sliced into just less than 2 inches. It's easy to find at your local Japanese or Asian grocery store. If you can’t find it, replace it with brioche. Cut the bread thick to make a pocket.
- I use beet or cane sugar for this recipe. They are lighter naturally. Any sugar can work.
- Whole milk is the best for this recipe. But you can also use non-dairy milk. Rich plant based milk is best - such as cashew milk.
